THAT Southern Italian institution, the pizza, is a quick and cheap meal that can easily be made at home. The variety of fillings is immense, among them ham, mushrooms, anchovies, olives, even clams or mussels. A brief consultation with the interior of the refrigerator almost always yields something that will be at home on a pizza. And instead of the traditional mozzarella and tomato, a more esoteric filling can be made with goats cheese and sun-dried tomatoes arranged on the dough, baked and sprinkled with fresh basil leaves. But the very simplest pizza consists of nothing more than the crusty dough sprinkled with coarse salt and a fruity green extra-virgin olive oil. Of course all pizzas should be eaten with copious draughts of chilled Beaujolais or a robust red wine.

EVEN though the French influence is everywhere in New Yorks culinary world, a few foods that are common in France have managed to escape the citys dragnet and remain almost unknown here. The French pizza is one stunning example. Yes, pizza. Although it is most often known as a pissaladiere, it is what it is: a round, flat bread, crisp on the bottom, simply garnished on top, rustic and yet urbane. At first, I couldnt remember seeing even one here, but recently I went searching for these French pizzas, with some success. At the restaurant Provence in SoHo, there is in fact a pissaladiere that gets it just right: a serving of leavened bread with a thin, brittle crust on the bottom and, on the top, a blanket of golden sauteed onions and a bit of anchovy. At Picholine on the Upper West Side, a similar but smaller pissaladiere is sometimes offered as an appetizer. Another kind of French pizza, the tarte flambee of Alsace, usually served with bacon, chopped onion and a touch of the creamy cheese called fromage blanc, is a study in achieving complex flavors and textures with the minimum number of ingredients. THE thing about Neapolitan pizza, one axiom goes, is that the higher the grade of the olive oil, the better the thread-count of the proprietors clothes. So while a new national law mandates what can authentically be called Neapolitan pizza, the legislation also exposes a deeper, ages-old rift about whether pizza is best served to the masses or the classes..
